Visit and wine tasting in a cellar in Auxerre

After visiting the historic centre of Auxerre in 1h30, discover the Cave du Maréchal, an unusual place located in a secular vaulted cellar in the town centre and just a few steps from the Clock Tower. The owners will share their passion for wine and Burgundy terroir with you, during a tasting of 3 wines and 3 regional cheeses.

Visit to a smoked salmon factory

After visiting the historic centre of Auxerre in 1:30, discover how salmon is prepared in the heart of the Yonne in one of the best smoked salmon manufactures: “Le Borvo”, in Chemilly sur Yonne (14 km north of Auxerre). Overview of the evolution of fish conservation methods from its origins to the present day. Discover original know-how of preparation, including the art of manual slicing before your very eyes. Finish off with a tasting of smoked salmon at the end of the visit.

Visit to the Bailly Lapierre Cellars

After visiting the historic centre of Auxerre in 1h30, visit the Bailly Lapierre Cellars in
Saint-Bris-le-Vineux, remarkable for its more than 4 hectares of underground quarries entirely devoted to the production of Crémant de Bourgogne. Crémant tasting at the end of the visit.
