La “Gougère” : queen of the aperitif

The “gougère” is an unmissibable delight of Burgundian gastronomy. Made with savoury choux pastry and cheese, it is the perfect accompaniment for aperitifs.

Do not miss the October “Fête de la Gougère” in the different areas of Auxerre town centre, with demontrations by artisan bakers an a competition for the best gougère.

Find out about a new approach from Pyneau Prunutz, which revisits the traditional recipe by proposing gougères based on various flavours (Dijon mustard, blue cheese/walnut, Espelette spice, snail butter…).

 

Cherry growing

Cherry growing occupies a large part of the Coulangeois landscape, mainly around the villages of Jussy, Coulanges-la-Vineuse, Gy-L’Evêque and Irancy. What could be more pleasant in the spring than a walk through the cherry blossoms ? In June and July you can buy directly from the producers or from the small stands at the side of the road. Some producers even let you pick your own.

Typical dishes and local products

Another major example : the truffle from Burgundy, genuine black diamond of gastronomy with its unique flavour ! The Borvo smoked salmon : an institution in Burgundy. Not forgetting parsleyed ham in aspic, small pickled dills, blackcurrant liqueur, ham “à la chablisienne”, poached eggs in red wine sauce, Beef Bourguignon … and our many local cheeses like Epoisses, Soumaintrain or fresh goat’s cheese.

For those with sweet tooth, don’t miss out on teh honeyed spiced bread and ever closer to home, the many varieties of cherries produced in the area.
