The Domaine de l’Erable is situated in Courgis. We produce all our wines in harmony with nature and their terroir, using temperature-controlled stainless-steel vats as well as demi-muids. The estate’s defining feature is that 70 per cent of its AOC Chablis vines are planted on very steep slopes (up to 47 per cent). This results in wines with a very rich aromatic profile. The estate produces Chablis, Chablis Vieilles Vignes, Petit Chablis, Bourgogne Côte d’Auxerre and the famous Ratafia de Bourgogne. As a small, family-run estate, we strive to remain as close as possible to our vines, our wines and the natural world, which keeps us humble. It is in Chevannes, between Auxerre and Toucy, that we invite you to discover our wines, as well as our fresh truffles in season and truffle-infused products created in collaboration with Le Borvo.
